Core Item Repeat The food safety manager's certification has expired or they have not completed an approved training program. The owner is a CFM, and Rick Khallis CFM, both current. Owner does not work in the kitchen and Rick is only part-time. The CFM shall be a full-time employee in the kitchen. Today's inspection was a follow-up inspection. A full-time CFM is not employed; current chef has not renewed certification. Certificates available is the owner (does not work in kitchen) and a part-time cook. 30 days allowed for correction. Test strips not available. Due to the need for a second follow-up inspection, a $104.00 fee will be charged. |
