Core Item Corrected During Inspection Observed an ambient air temperature of 54F in the walk in cooler. All foods in the walk in cooler had an internal temperature of 41F or less. Per operator the walk in cooler was monitored and below 41F during morning routine equipment check.
Maintain equipment in good repair.
Action Taken: Walk in cooler was repaired and capable of proper cold holding during inspection.

4-601.11 (A) / EQUIPMENT, FOOD CONTACT SURFACES, AND UTENSILS
Priority Foundation Item Corrected During Inspection Observed dried food residue on the food contact surface of the slicer blade.
Maintain food contact surfaces in a clean condition.
Action Taken: Slicer blade was washed rinsed and sanitized during inspection.

4-601.11 (B-C) / EQUIPMENT, NONFOOD CONTACT SURFACES, AND UTENSILS

The purpose of todays visit was to conduct a routine inspection of the facility.
