3-501.16 (A)(2), (B) / POTENTIALLY HAZARDOUS FOOD, COLD HOLDING Priority Item Corrected During Inspection Foods in Beverage Air under landing zone not being cold held at 41°F or less - about 1/2 pint of pasteurized liquid egg whites, @50 deg; about 1/2 pint of liquid pasterized eggs @ 44 deg; about 1 1/4 lbs of burrito mix @ 72 deg. (all temps are deg F.) Maintain cold potentially hazardous foods at or below 41°F. Dispose of these foods. Action Taken: Foods were opened & disposed. As the reach-in cooler is operating correctly, the foods were apparently left out too long during breakfast prep. This procedure will be corrected. Correct By: 22-Nov-2013 |
5-501.113 / COVERING RECEPTACLES Core Item Receptacles for storing refuse with food inside are uncovered and stored outside.. Provide tight fitting lids or doors for all receptacles and waste handling units with food inside that store refuse, recyclables, and returnables. Provide a cover/covers for the Dumpster. HELEN & ANNA WERE THE PICs AT A ROUTINE OPERATIONAL EVALUATION CONDUCTED TODAY. ONE PRIORITY VIOLATION, WHICH WAS CORRECTED AT ONCE, & ONE CORE VIOLATION, WAS CITED. DESPITE THIS FACILITY'S SIZE, IT WAS FOUND TO BE CLEAN & NEAT. A HEALTH POLICY CONTINUES IN EFFECT. GOOD PRACTICES & PROCEDURES ARE KNOWN & WERE OBSERVED TO BE IN USE. |
