2-102.11 (A)(B)(C 1, 4-16) / DEMONSTRATION OF KNOWLEDGE Priority Foundation Item Observed the Person in Charge (PIC) is unable to demonstrate knowledge where handwashing is taking place in the bar area. PIC is also unable to maintain buffet cold holding temperatures at 41 degrees or below. If time as a public health control is going to be used, written procedures must be provided. The person in charge shall obtain training or training materials in the areas of hand washing and cold holding so they are able to demonstrate knowledge and train employees on proper food safety practices.
