The shelving that holds cooking equipment, pans, and bowls were observed heavily soiled with flour. PIC stated the shelving will be cleaned and equipment, pans, and bowls will be properly cleaned before use.
To prevent contamination, the food-contact surfaces of cooking equipment and pans shall be kept clean.
