Critical Corrected During Inspection TCS foods not being hot held at the proper temperature. The beer cheese was not properly hot holding, it was observed at 127°F. The PIC immediately removed what was left in the pan and discarded. The PIC added a newly reheated pan of beer cheese that was at 167°F.
