Critical Corrected During Inspection Equipment food-contact surfaces or utensils are dirty. Observed filthy water wet nesting clean utensils in a bus tub on clean utensil/pan rack. The PIC removed utensils immediately and will clean and sanitize utensils before use.
To prevent contamination, equipment food-contact surfaces and utensils shall be clean to sight and touch. Correct By: 07-Jun-2017

There is no test kit available for measuring the concentration of the sanitizer.
