3717-1-04.8(A) / Equipment and utensils - air-drying required.
Equipment and utensils are not being air dried. Hotel pans were stacked and store while still wet, to reduce the likelihood of mold growth ensure that all equipment is adequately air dried prior to being stacked and stored.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Non-food contact surfaces of equipment are unclean. Doors, handles, and other nonfood-contact surfaces of equipment are dirty with accumulated grease. The equipment is being wiped down, however several areas of equipment are being ignored during the cleaning process. Whenever equipment is cleaned, ensure that all handles, doors, and surfaces are cleaned.

3717-1-05.1(S) / Plumbing system - maintained in good repair.
Plumbing system not properly maintained or repaired. A large puddle of water was found near at the serving counter near the handwashing sink. According to the manager the puddle appears every day and the cause has yet to be determined. Determine and fix the source of the puddle.
