3717-1-06.4(B) / Cleaning - frequency and restrictions.
Observed an accumulation of pink mold on the air return above the prep area.
The physical facilities shall be cleaned as often as necessary to keep them clean, and cleaning shall be done during periods when the least amount of food is exposed. To remove a possible source of contamination, clean the air return at a frequency which precludes the accumulation of mold.
3717-1-06.4(A) / Repairing.
The paint on the air return above the prep area has chipping paint.
The physical facilities shall be maintained in good repair. To remove a possible source of contamination, either remove all chipping paint or repaint the surface.
