Corrected During Inspection Equipment and utensils are not being air dried. The clean hotel pans were observed wet nesting on rack. The PIC stated, "he will re-educate employees and space pans out so they can dry properly."

Equipment components are not intact, tight or properly adjusted. The holding cooler was at 56°F. The PIC attempted to turn cooler down. The PIC will monitor and if the adjustment did not work a work order will be submitted for repair.
