Critical Corrected During Inspection A container of whipped cream was being held at 43 degrees.
To prevent the growth of pathogens, except during preparation, cooking, or cooling, or when time is used as a public health control, TCS food shall be held at 135°F or above (except that roasts cooked using time and temperature parameters in 3717-1-03.3 may be held at 130° F), or at 41°F or less. The dial for the cooler was adjusted to bring the temperature to 41 degrees or lower.

3717-1-06.2(K) / Dressing areas and lockers - designation.
Corrected During Inspection Observed employee food in the reach in cooler being used for the facility.
Dressing rooms or dressing areas shall be designated with lockers or other suitable facilities provided for the orderly storage of employees' clothing and other possessions. Food was disposed of.
3717-1-06.4(F) / Drying mops.
Corrected During Inspection A mop was being dried in the mop sink.
After use, mops shall be placed in a position that allows them to air-dry without soiling walls, equipment, or supplies. Mop was placed upright in the mop sink so that the mop head could dry properly.
