[?] A summary of the violations found during the inspection are listed below.

3717-1-03.4(F)(1)(a) / Time/temperature controlled for safety food - hot holding.
Critical Repeat TCS foods not being hot held at the proper temperature. 1. The hot box in the kitchen had accidentally been unplugged and was holding at 120 degrees. The chicken inside was reheated, and the hot box plugged in again. 2. The serving line was turn up to the maximum, but was holding TCS foods at 110-125 degrees. Less food will be held on the line to ensure that it is served before the temperature drops below 135 degrees. The serving line will still need to be repaired/adjusted so that it is capable of holding food at 135 degrees or higher.
