Critical Corrected During Inspection Observed an employee enter the facility and go straight to the food service line without properly washing their hands. The PIC corrected immediately. The employee did not contaminate any food once they were called out. The PIC re-educated the employee about proper procedures. Food employee(s) did not wash hands when required.

Critical Corrected During Inspection An employee did not put on food prep gloves in order to handle ready to eat foods on food serve line. The person was called out before handling any food or utensils. The PIC re-educated the employee about proper procedures.

3717-1-04.2(A) / Equipment - cooling, heating, and holding capacities.
Observed several cold foods placed on prep line without the proper amounts of ice to surround foods in order to maintain foods at proper temperature for any length of time. The PIC corrected immediately by adding ice to the level of food height. Note: Issue was discussed in detail before it became an issue of temperature abuse.

3717-1-03.5(A) / Standards of identity
Several prepackaged desserts in grab in go cooler along serving line did not contain food identification (common name) of each packaged food held within. Furthermore, the FSO did not have a copy of the ingredients and allergen content for each packaged food available upon customer request. Nor, did they have a sign or poster in or on an adjacent area to the display case. The PIC immediately pulled all items from sale until corrected. Packaged food labels are not in compliance with standards of identity.

Irreversible registering temperature indicator not readily accessible for hot water mechanical warewashing operations. The employee did not have test strips to verify dish machine sanitation temperature. The PIC corrected immediately by calling dispatch for supplies.
