4-602.13   The nonfood-contact surfaces of the following equipment had accumulations of grime and debris: gaskets at 2dr prep cooler
Nonfood-contact surfaces of equipment and utensils shall be cleaned at a frequency necessary to preclude accumulation of soil residues.
8-326(a)-(h)   The Person in Charge (PIC) has proof of successful completion of an approved Certified Food Manager (CFM) exam but does not possess the Northern Virginia Certified Food Manager certificate (photo card) issued by ORS Interactive, Inc.
Obtain the photo identification card from ORS Interactive, Inc. (see handout provided) within 10 business days to avoid further enforcement action. A copy of the photo identification card can be faxed to my attention at (703) 385-9568.


Today's inspection was a follow-up inspection due to CFM's request to check on the 2dr prep cooler. 2dr prep cooler was not able to keep items at cold-holding temperatures during routine inspection on October 23, 2012 and the ambient air temperture was at 58F. EHS verified ambient air temperature at 41F and raw shrimp was at 38F and cooked dumplings was at 35F (stored in 2dr prep cooler). Please send fax of new CFM card by December 14, 2012.
