6-301.14  Corrected During Inspection Observed that sign or poster that notifies food employees to wash their hands is not provided at all handwashing sinks used by food employees: by 3 compartment sink and in two bathrooms.
Provide a sign or poster at all handwashing sinks used by food employees that reminds food employees to wash their hands.
4-501.114(C)  Corrected During Inspection Critical Quaternary ammonium compound sanitizing solution used was not being used at an acceptable concentration. Observed the solution with less than 100 ppm in the three compartment sink.
The quaternary ammonium sanitizer used in this facility shall have a concentration of 200 ppm based on the manufacturer's use directions.
3-501.16(B)  Corrected During Inspection Critical Observed raw shell eggs stored at room temperature during rush hours in the morning - moved to cooler. Recommended an option of putting container in ice bin.
Shell eggs that have not been treated to destroy Salmonella shall be stored in refrigerated equipment that maintains an ambient temperature of 45°F or less.
3-304.14(B)(1)  Corrected During Inspection Repeat Wet wiping cloths used for wiping counters and other equipment surfaces were observed stored on the counter.
Wet wiping cloths are to be used for wiping counters and other equipment surfaces and are to be held in a chemical sanitizer solution at the appropriate concentration between uses.
4-101.19   The nonfood-contact surface of the following equipment is not corrosion resistant, nonabsorbent, and/or smooth: egg carton lining grill shelving.
Non-food contact surfaces of equipment that are exposed to splash, spillage, or other foods that require frequent cleaning shall be constructed of a corrosion-resistant, nonabsorbent, and smooth material.
4-302.14   Repeat There is no test kit located in the facility for monitoring the concentration of the chemical sanitizing solutions.
Obtain a QUATERNARY AMMONIA test kit.

Sign posted. -Time as Public Health Control (TPHC): Previous TPHC (9/9/11) for egg rolls and fried chicken no longer applies. Manager purchased hot case. Manager signed during this inspection for scrapple (meat/oat patty) to be included into TPHC.
