| 5-205.15(B) / PLUMBING SYSTEM MAINTAINED IN GOOD REPAIR Dishwasher is currently not being used due to parts having to be ordered for repair of the system. Small hot water tank that serves the dishwasher has been replaced but dishwasher is still not sanitizing therefore dishes are being properly sanitized in the 2-compartment sink at this time. A plastic tub is being used to sanitize the dishes after they are washed and rinsed. All staff has been trained on how to proper wash-rinse-sanitize wares. Dishwasher is not to be used until it is repaired.  |
