3-501.16 (A)(2),(B) / TIME/TEMPERATURE CONTROL FOR SAFETY FOOD, COLD HOLDING
Priority Item Jellies, sauces, marinara in continental being cold held at 47-51°F. Observed coils were iced up and causing a lot of dripping Ambient observed at 49F.
Maintain time/temperature control for safety foods (TCS) at 41°F or less. Discard all TCS food held out of temperature for more than 4 hours. American legion is allowing operator to use their 3 door unit until repairs can be made. Correct By: 24-Aug-2020
