| 4-301.11/COOLING, HEATING, AND HOLDING CAPACITIES (EQUIPMENT) The current equipment in the facility is not inadequate to provide proper food temperatures. Right 2 door Reach-in Cooler for juices is temping at 48 degrees F. Provide adequate equipment (sufficient in number and capacity) to heat, cool and hold food at proper temperatures. Minimum upgrades would include having cooler repaired so it could meet proper cold holding temp. Reinspection will happen in or before 10 days (01/20). TCS items in cooler were removed, inspected and discarded if needed by PIC. Correct By: 20-Jan-2022 |
