Priority Foundation Item Corrected During Inspection Observed beans, pico de gallo, shredded beef, and taquitos made on 5/08/22 in walk-in cooler that are improperly date marked. There is no date mark on them.
Ready-to-eat time/temperature control for safety foods prepared and held in refrigeration for more than 24 hours must be clearly marked to indicate a consumption or discard date of 7 days or less. (7 days = date of prep + 6 days.) PIC made me aware that they have a hard time keeping date stickers on pans, but will have all pans date mark with the approrpiate date. Correct By: 09-May-2022
