Milk Cream cheese, salsa in Service lowboy being cold held at 42-51°F. Operator stated that thermostate was set at 1 and needed to be turned up ambient observed at 49F
Maintain time/temperature control for safety foods (TCS) at 41°F or less. Discard all TCS that have been out of temperature more than 4 hours. Rapidly coole to 41 all other TCS foods. Correct By: 20-Oct-2020
