Observation (CORRECTED DURING INSPECTION): Insufficient number of chlorine sanitizer spray bottles in the cafeteria (ie. only 1 of 4 spray bottles checked had sanitizer solution)
Corrective Action(s): Sanitizer solutions were replenished during inspection.
*Ensure sanitizer solutions are checked/prepared on a regular schedule.
*Chlorine sanitizer solutions must be available throughout the day to sanitize food-contact surfaces and CIP equipment.

5) Monitor for signs of rodent activity

Observation: 1) Plastic shelving in the pantry area is trapping soil, debris, and mouse droppings underneath, preventing easy access for cleaning.
2) Possible entry points observed in ceiling of the pantry (around sprinkler head(s))
3) Possible entry point into the pantry from the overhead ledge (top of the walk-in cooler)
Corrective Action(s): 1) (Repeat infraction-noted on previous inspection report). Replace plastic shelving units with movable metal wire shelves to allow thorough cleaning of the pantry space.
2) Install wire mesh material over the ceiling openings to eliminate possible entry points.
3) Install wire mesh around the perimeter of the space above walk-in cooler to eliminate possible entry point.

Observation: Mouse droppings observed on the following surfaces:
1) Floors throughout the cafeteria (primarily in the pantry)
2) Shelving and food containers in the pantry.
3) Undercounter shelves in the cafeteria.
Corrective Action(s): *Clean and disinfect surfaces where rodent droppings are found (w/ chlorine bleach solution)
*Re--implement an enhanced cleaning program to clean and disinfect surfaces in the food premises on a regular intervals (ie.daily/weekly/monthly)
