Routine inspection conducted with the practicum student.

Temperature (coolers to be maintained at 4C or less, freezers at -18C or less, hot holding at 60C or above):
- Front area:
Prep cooler at 3.5C
Hot holding steam table at 73C
Coca-cola cooler at 4.7C
Monster cooler at 4.3C
Undercounter cooler at 4.1C
One container of lettuce was stored at 4.9C using ice bath. Staff confirmed that lettuce is stored in this manner for 2 hours during rush hour.
- Back area:
1 door stainless steel cooler at 1.9C
2 door stainless steel cooler at 3.4C
Stainless steel freezer at -18.3C
Cooked rice hot held at 68C
- Temperature logs were maintained and found up-to-date.

NOTE - Please do not pre-fill the temperature logs (3:00PM log was found filled out at 2:30PM)

Storage:
- All food items were stored at least 6" off the floor.
- All food products were found either in original packaging or covered inside coolers.
- Storage area was well-organized.
- Chemicals and cleaners were stored separate from food preparation areas.

Sanitation & Maintenance:
- Hand wash stations (x2) were adequately stocked with hot/cold running water, liquid soap, and single-use paper towels.
- Sanitizer spray bottle available and sanitizer pail available. The concentration of QUATS noted at 200ppm.
- 3-compartment sink available for manual dishwashing. Drain plugs and sanitizer dispenser available.
- Utensils were found in good sanitary condition.

Pest Management:
- No visible signs of pest activity observed at the time of inspection.
- Mechanical traps were present throughout the facility.

Administrative:
- Operating permit was posted in a conspicuous location.
- Staff has valid FoodSafe Level 1 certificate (Exp March 25, 2027)
