Walk in cooler and prep cooler temperatures are below 4C/ 40F - good. Tuna is kept cold in coolers. Food storage is well organized. Rice hot holding is above 60C/ 140F. Food is covered and protected from contamination (store sugar in covered bin). Staff on site has Food Safety certification. Hand washing stations available in main kitchen and front service area. Hot/cold water, liquid soap, and paper towels in a dispenser. Quats sanitizer is automatically dispensed - check accuracy of your test strips (showing too high). Quats to be 200ppm or as per label on chemical bottle. Quats sanitizer used on counters and food contact surfaces. Tongs are stored on ice - good. These are washed and sanitized/ run through dishwasher every 2-3 hours (good - max 4 hours required). Commercial dishwasher has a final sanitizing rinse of 71C/160F measured inside of the machine (temperature test strip turned black). Staff are following a routine cleaning schedule. Premises is very clean. Pest control monitoring and contract is in place - see above. Holes in wall/cracks at counter were sealed as per owner. Signature not required.
