Observation (CORRECTED DURING INSPECTION): Desserts (cakes, nanaimo bars, dessert cups) stored above 4C in the front sliding door display coolers (cooler #10 and cooler #2). Desserts were relocated to the walk in cooler and stand up cooler during the inspection.
Corrective Action(s): Ensure cold potentially hazardous foods are stored at 4C or colder.

Observation (CORRECTED DURING INSPECTION): Multiple damp wiping cloths left on the counter at ambient temperature. Wiping cloths removed from counters and placed into dirty hampers.
Corrective Action(s): Do not leave damp wiping cloths on the counter as it can be a breeding ground for bacteria. Either:
- Use a new wiping cloth each time
- Use a single use paper towel for wiping
- Store wiping cloths in a food surface sanitizer solution (eg. 200ppm bleach/quats)
