Kitchen not in operation during time of inspection. Staff anticipates operation to start in September 2022

General observations
- Handsinks equipped with hot and cold running water, liquid soap, and paper towel
- High temperature dishwasher measured to reach a final rinse temperature of 71.5C
- Ice machine is in sanitary condition with the scoop stored outside of the unit
- Dry storage room observed to be organized with food covered and in plastic pest-proof containers
- Walk-in cooler and sliding door cooler measured to be at 4C or less
- Walk-in freezer measured to be at -18C **Please clean up the frost buildup observed on the door
- Premises maintained in sanitary condition
- No pest activity detected during time of inspection. Rodent traps observed in place
- Staff indicated that chef has FOODSAFE Level I certificate

Note:
1. Bleach sanitizer observed to be bleaching out on test strip. Use 0.5 tablespoon of bleach per 1L of water as a food contact surface sanitizer
2. Maintain a temperature log of the refrigeration units and freezer to ensure that units can maintain the appropriate temperatures
