- All coolers at/below 4C
- All freezers at/below -18C
- Holding units for fried chicken and gravy above 60C (facility changed the gravy hot holding unit to two individual Cayenne warmer and rethermolizers)
- Thermometers presented in all fridges and freezers

*General maintenance and sanitation
- Three compartment sink available for manual dishwashing
- QUATS sanitizer in the dispenser and spray bottles at 200ppm
- All food items stored off the ground and free of contamination
- No signs of pest activity observed during inspection
- Exhaust hood next service date March, 2025
