4-602.11 (A-D) / EQUIPMENT FOOD-CONTACT SURFACE
Priority Item knives was not cleaned after being contaminated with employee pants. knives are sitting in contaminated wet green bucket in the make-line area.
Wash, rinse and sanitize above noted items properly
Action Taken: Employee placed noted knife to be cleaned in the three compartment sink.

4-702.11 / BEFORE USE AFTER CLEANING
Priority Item Repeat Corrected During Inspection Employee rinsed knife in handwashing sink then whipeed it off with pants then placed it in cutting board to be used.
In use knives shall be wash rinse and sanitize in the three compartment sink.
Action Taken: Employee placed noted knife in three compartment sink to be cleaned properly.

5-205.11 / USING A HANDWASHING SINK
Priority Foundation Item Repeat Corrected During Inspection Employee placed green station (used for make-line knives) inside the handwashing sink located in the front area, employee washing hands while knives and green station was inside handwashing sink; Employee rinsed knife in the same handwashing sink.
Train food employees that handwashing sinks shall not be used for any other purpose than handwashing.
Action Taken: Employee was directed to not use the handwashing sink other than for handwashing.

7-201.11 / SEPARATION
Priority Item Corrected During Inspection In use cutting knives are stored in sanitizer green station bucket and are being used without air drying in between uses.
Stop storing in use knifes in sanitizer water.
Action Taken: Employee removed the green station from noted area.

Comments
This is a routine inspection. Violation 5-205.11 (hand washing sink is not accessible to use) Repeat X2 and 4-702.11 (placing knives in sanitizer water and not sanitizing properly) repeat X2 , if repeat X3 an enforcement follow up will be conducted along with a fee of $104. There is no follow up for now.
