Priority Item Corrected During Inspection The following TCS foods were being improperly cold hold at 59 degrees F in pizza cold top reach in cooler: pepperoni (15 lbs), italian sausage (15 lbs), chicken (20 lbs), cheese (30 lbs), pizza sauce (40 lbs) and bacon (10 lbs). Per manager, TCS foods were taken from walk in cooler an hour before inspection.
Maintain cold potentially hazardous foods at or below 41°F
Action Taken: Manager moved the above listed TCS foods to walk in cooler. Sole Air was contacted to repair cooler. Correct By: 04-Feb-2019
