Core Item Corrected During Inspection Several containers of sauces and gravys were stored in unlabeled containers.
Store all foods that are removed from their original packages in containers labeled with the common name of the food or ingredient.
Action Taken: The manager labeled the containers with the food item that was inside.

3-501.17 / READY-TO-EAT, POTENTIALLY HAZARDOUS FOOD, DATE-MARKING
Priority Foundation Item Corrected During Inspection A few bulk containers of sauces and gravys in the walk-in cooler were missing dates.
Adjust method or procedures so that all ready-to-eat potentially hazardous foods are date marked with a date not to exceed 7-days.
Action Taken: The manager stated the foods were prepared this morning and the cooks had not yet labeled the containers. The containers were properly labeled by the cook.
