Priority Item Corrected During Inspection Observed roast beef hot holding at 131.8F from the night before.
Discard unsafe roast beef and maintain heating unit so that Time/Temperature Control for Safety Food shall be maintained at 135F or above.
Action Taken: Person in charge discarded above mentioned roast beef and corrected the temperature on the hot holding unit so that it would maintain a food temp of 135F or above.

Comments
This was a routine inspection of the facility. Observed proper food handling and employee hygiene practices. The facility is clean and in good condition. No follow up is required at this time.
