| 5-402.11 / BACKFLOW PREVENTION Priority Item Observed 3-compartment sink without air gap. Observed the drain located under the 3-compartment sink is sealed. Design the sewage system in a manner that would preclude a direct connection between the sewage system and the drain from which food is placed. Install air gap of at least 1 inch OR 2x the pipe diameter between floor drain and drain line of food 3-compartment sink by a licensed plumber. A follow-up shall occur no later than 14 days. | This was a routine inspection. Food is from an approved source. Observed an approved sanitizer. Upon arrival, observed 3-compartment sink without an air gap. The drain on the floor has been sealed and there is no longer an air gap for the 3-compartment sink. A follow-up shall occur no later than 14 days for the correction of violation 5-402.11. If there is a second follow-up due to the violation not corrected by the first follow-up, a fee of $120.00 will be applied.
