This is the 1st paid requested inspection of the year for Pitboss Smokehouse operating at 495 West Broad St, Linden, MI. Receipt # 84018 COVID 19 health policy is in place. SOP's on site and available. Water/Food is from an approved source. All holding temperatures were in the safety zone at the time of inspection. STFU is extremely clean and well organized. Observed proper handwashing and glove use. Sanitizer is EPA registered and proper concentration per manufacturer is being used. Employee demonstrated proper heating, cooling and re-heating methods as well as cook off temperature. There are no violations to cite and no follow up is required at this time.
