Priority Item Corrected During Inspection Observed raw shelled eggs being stored over cooked bacon in beverage air reach in cooler.
To prevent cross contamination, store cooked bacon above raw shelled eggs.
Action Taken: Employee moved raw shelled eggs to the bottom shelf and the bacon to the middle shelf. Correct By: 14-Jan-2019

Core Item Corrected During Inspection Wiping cloths are being used to soak up fat from bacon and animal foods before serving.
Change methods or procedures to protect foods from contamination.
Action Taken: Sanitarian adviced employees to discontinue this practice. Owner will discontinue this practice and will change to single service paper towel to soak up animal fat. Correct By: 14-Jan-2019

Priority Foundation Item Corrected During Inspection Observed 2 flats of eggs on food prep table without any documentation. PIC stated that eggs were brought out during breakfast rush. Estimated time was less than 2 hours.
Create a plan for time as a public health control and maintain the documentation onsite.
