4-702.11/BEFORE USE AFTER CLEANING
Utensils and equipment which were placed in ware washing machine are not being sanitized after cleaning before being used.
Clean and sanitize all utensils and equipment before contact with food. DO NOT CONTINUE TO USE WAREWASHING MACHINE UNTIL REPAIRED. Wash, rinse, sanitze food contact equipment and utensils manually. Correct By: 26-Jul-2017 Action Taken: Warewashing machine has been serviced and is now registering proper temperatures on this inspector's test strip (see file for confirmation).
6-301.11/HANDWASHING CLEANSER, AVAILABILITY
Soap not available at two employee handwashing sinks.
Provide hand soap at handwashing sink to facilitate proper handwashing. Correct By: 12-Jul-2017 Action Taken: Soap is available at handsinks.
Comments
This is a follow-up inspection for the routine inspection conducted on 7/12/17. At this time, all priority and priority foundation violations have been corrected except priority foundation violation 4-302.14 (sanitizer test strips). The core violation 4-501.11 (good repair/proper adjustment) also is remaining. These violations shall be corrected before the next routine inspection. Additionally, at this time, the coldtop/RIC is still unable to properly cold hold, however, time is being properly used as a public health control (observed proper time stamping and temp measuring devices left in PHFs). Continue to use this method until the cooler is repaired or replaced.
