| 4-501.114/MANUAL AND MECHANICAL WAREWASHING EQUIPMENT - SANITIZER NOT BEING USED PER MANUFACTURER The sanitizer concentration for the dishwashing machine located in the kitchen had a reading of 0 ppm for chlorine. Repair dishwasher to allow a proper concentration reading of 50 ppm to 100 ppm Use 3-compartment sink to wash, rinse, and sanitize utensils and dishes until dishwasher is properly repaired. A follow-up shall be conducted no later than 10 days. Correct By: 25-Aug-2023 Action Taken: Noted item was repaired. Sanitizer reading was at 100 ppm. |
