Core Item Cart that stores plates and saucers for catered events observed uncovered with dried food debris on the surfaces.
All washed, rinsed and sanitized food service items shall be protected from possible contamination. Wash, rinse and sanitize items then relocate or cover. Correct By: 13-Feb-2013
3-501.17 / READY-TO-EAT, POTENTIALLY HAZARDOUS FOOD, DATE-MARKING
Priority Foundation Item Corrected During Inspection Five individual packages of deli meat were observed open without a datemark.
Once commercially processed deli meat packages are opened, a seven day datemark shall be placed on the container from the day of opening.
Action Taken: Manager properly datemarked the deli meat packages. Deli meat was opened within the past 2 days.

Core Item Handsink located in the cafe' is leaking underneath.
Repair to stop leaking and accumulation of water; water is puddling in the cabinet. Correct By: 27-Feb-2013

Core Item New addition of food prep since last inspection. There is not a current, full-time employee that is a certified food manager.

Comments
This facility is extremely clean and organized.

All hot and cold holding temperatures were in the safety zone during the inspection. Proper glove use observed.

This facility now serves paninis, wraps, soups and dips. Kitchen is used by caterers for events. Facility is considering catering out of this kitchen themselves for events. The yearly license fee will increase from serving site only to food preparation/serving kitchen. With the new addition of food, a certified food manager is mandatory per the 2009 Food Code/Food Law. 90 days is allowed for correction.

Remodeling is in the future plans for the cafe'. Any additional equipment to be added, including a possible 2 - 3 compartment sink will require approval from the Genesee County Health Department. A plan review application and fees shall be submitted.
