Today is a routine inspection of the facility.
The facility is clean and well organized.
All hot and cold holding temperatures in the safety zone.
Proper hand washing, glove use and hair restraints.
Proper date marking procedures in place.
Food purchased from Gordons and produce purchased from local Meijer or Kroger the day of the event.
Time as a control used for lettuce and tomato; held for under 4 hours then discarded.

Allergen Training must be completed by Certified Food Manager.
