Priority Foundation Item Corrected During Inspection Ground beef and beans are cooling in ice water (not completely submerged) for one hour at a temperature ranging from 98F-135F.
Adjust procedures or methods to assure that food is properly cooled to 41°F or below.
Action Taken: PIC submerged food items in ice water to cool down properly.

3-501.16 (A)(2), (B) / POTENTIALLY HAZARDOUS FOOD, COLD HOLDING
Priority Item Corrected During Inspection All food items in the top loader cooler such as sour cream, pico, cheese, diced tomato and lettuce were holding at a temperatures between 49F-55F from 3 hours prior per operator.
Maintain cold potentially hazardous foods at or below 41°F
Action Taken: Place noted food items in a working container or in ice bath.

4-501.11 / GOOD REPAIR, PROPER ADJUSTMENT, AND OPERATION
