3-302.11 (A)(1)(a & b), (A)(2) / PACKAGED AND UNPACKAGED FOOD - SEPARATION, PACKAGING, AND SEGREGATION
Priority Item Corrected During Inspection Observed container of 10 Ibs of raw chicken stored above a container of raw shrimp in WIC.
To prevent cross contamination, relocate raw chicken to the bottom of shelving unit.
Action Taken: PIC relocated noted item to bottom of shelving unit.

3-304.13 / USE LIMITATIONS ON LINENS AND NAPKINS
Core Item Corrected During Inspection Observed produce covered with a cloth in the WIC and near the prep line.
Discontinue use of linens to cover food and use food degradable covering such as saran wrap.
Action Taken: PIC removed noted items.

3-501.13 / THAWING
Core Item Corrected During Inspection Observed raw shrimp sitting in cold water in a container of 30 Ibs next to the prep sink. Temperature of water was reading at 42 F.
Adjust procedures or methods to properly thaw foods such as running cold water over noted item.
Action Taken: PIC relocated noted item to WIC.

4-501.12 / CUTTING SURFACES

Priority Foundation Item Repeat Corrected During Inspection Handsink near front of house was not easily accessible due to being blocked by 2 bags of water bottles that are used for personal use. REPEAT X2
