3-304.11 / FOOD CONTACT WITH EQUIPMENT AND UTENSILS
Priority Item Corrected During Inspection Observed a shaker bottle of parmesan cheese being stored directly on the surface of mozzarella cheese in the cold table.
Remove the parmesan from the mozzarella. Food contact surfaces of equipment shall be cleaned and sanitized before use with food.
Action Taken: PIC removed item from above noted location and discarded cheese.

Comments
