Priority Item Corrected During Inspection Employee observed handling sliced tomato with bare hands.
Employees shall use single-use gloves, utensils, bakery papers or other approved means when handling ready to eats foods.
Action Taken: The tomato was discarded and the staff was educated on proper handling of ready-to-eat foods.

3-501.13 / THAWING
Core Item Corrected During Inspection Pork Sausage is being improperly thawed by sitting on the counter at room temperature.
Adjust procedures or methods to properly thaw foods.
Action Taken: Pork was still cold as it had only been out for a half hour; pork was relocated to the refrigerator and the staff was educated on proper thawing procedures.
