3-302.11 (A)(1)(a & b), (A)(2) / PACKAGED AND UNPACKAGED FOOD - SEPARATION, PACKAGING, AND SEGREGATION
Priority Item Corrected During Inspection Observed cross contamination in the upright kitchen reach in cooler. Raw chicken and raw tuna was found stored next to bags of shredded cheese and other RTE foods.
To prevent cross contamination, store raw foods below and away from cooked and ready to eat foods.
Action Taken: The RTE foods were moved to the shelving above the raw foods therefore providing adequate separation between RTE and raw foods.

4-101.19 / NONFOOD CONTACT SURFACES
Core Item Towels were found stored under the cutting boards on the cold top reach in cooler prep surface.

Operational Routine Inspection

Date marking procedures were found in compliance.
The sanitizer supply was replenished at the bar dish machine during the inspection. Remember to prime the sanitizer before it is used.
This facility is clean and well organized. Provide training in the proper way to store raw foods.
Only two violations were cited today. No follow up is required.
