3-501.16 (A)(2), (B) / POTENTIALLY HAZARDOUS FOOD, COLD HOLDING Priority Item Observed the following at a temperature between 46 F to 49 F in Arosa cold table; several shallow containers of sausage toppings (12 Ibs total), several shallow containers of beef toppings (10 Ibs total), 1/2 Ib of shredded chicken, 3 Ibs of mozzarella sticks, several shallow containers of diced ham (15 Ibs total), several shallow pans of bacon bits (9 Ibs total), 1 Ib of ranch, several shallow containers of pepperoni (18 Ibs total), 5 bags of shredded cheese (28 Ibs total) Discard all noted items. 4-501.11 / GOOD REPAIR, PROPER ADJUSTMENT, AND OPERATION Core Item Observed ambient temperature of Arosa cold table at 48 F. All TCS foods stored in cold table were discarded. Cold table may be replaced by brand new unit per statement instead of repair per statement. Discard all TCS foods. Non-TCS can be stored in cold table. Contact maintenance to repair cold table.
