Priority Item Corrected During Inspection Observed cooked chicken breasts in the three door reach in cooler near the walk in cooler being cold held at 50°F.
Maintain cold potentially hazardous foods at or below 41°F
Action Taken: Staff discarded all of the cooked chicken breasts.

Core Item Observed the three door reach in cooler near the walk in cooler was holding temperatures at 48 degrees, the majority of food items were cold holding at 42-43 degrees and were moved to a unit that was functioning properly. .

Priority Item Corrected During Inspection Pesticide used in food establishment is not being used in accordance with federal regulations. Facility is using open air pest strips.
Use and apply pesticides in accordance with federal regulations.
Action Taken: Staff discarded all six illegal pest strips.

Comments
This was a routine inspection of the facility. The facility was overall clean and organized. Most cold holding temperatures were observed in the safety zone. Staff was observed using proper hand washing, hair restraints, and gloves.
This facility may no longer open the garage style doors, the variance for this facility is currently suspended due to pest issues in the building. The variance may be revisited once pest issue is under control. Once pests are under control the operator shall contact the Genesee County Health Department to reinstate the variance.
