3-301.11 (C) / PREVENTING CONTAMINATION FROM HANDS
Priority Foundation Item Corrected During Inspection Employee observed handling slicing loaves of bread with bare hands.
Employees shall use single-use gloves, utensils, bakery papers or other approved means when handling foods.
Action Taken: The PIC talked to the employyee about how to prevent bare hand contact with ready to eat foods. The employee complied and began utilizing gloves to prevent bare hand contact with ready to eat foods.

3-302.11 (A)(1)(a & b), (A)(2) / PACKAGED AND UNPACKAGED FOOD - SEPARATION, PACKAGING, AND SEGREGATION
Priority Item Corrected During Inspection Observed cross contamination in the reach in cooler in the front hallway. Three flats of shelled eggs were found stored next olives and other ready to eat foods.
To prevent cross contamination, store raw foods below and away from cooked and/or ready to eat foods.
Action Taken: The contents of this cooler were rearranged so that there was a barrier provided between the shelled eggs and the ready to eat foods.

6-202.11 / LIGHT BULBS, PROTECTIVE SHIELDING
Core Item Lights located in the basement are not shatter resistant.
Provide shielded, coated, or otherwise shatter resistant light bulbs. Correct By: 10-Mar-2017

CORRECTION:

Todays inspection was an operational routine inspection. If you have any questions regarding this report, please contact your Area Sanitarian at 810-257-3848.
Regarding uncorrected previously cited violations: 4-204.112, 2-402.11, and 4-501.11 have been corrected as required.The violations cited today were discussed with the PIC.. Two of the three violations violations that were cited today were corrected during this routine inspection.

There have been no procedural changes at this food service establishment.
All food temperatures were found in compliance.
Sanitizer levels were found in compliance.
