This is the 2nd paid STFU inspection of the year for Pitboss Smokehouse operating at Reds Body Works in Swartz Creek. Paid $90 Check # 1027 Invoice # 85046 Paid on 2/26/2021 SOP's are on site and being executed properly. Observed proper hand washing and glove use. All holding temperatures were in the safety zone at the time of inspection. Person in charge demonstrated proper heating methods and temperatures. Sanitizer is EPA approved and proper concentration per manufacturer being used. Three are no violations to cite and no follow up is required at this time.
