Cool foods from 135 degrees to 70 degrees in 2 hrs, then 70 degrees to 41 degrees in the next 4 hrs. Do not cover food until food is at an internal temperature of 41 degrees. Action Taken: PIC placed sloppy joe in the cooler, monitoring temperature with calibrated thermometer. |
