Core Item Corrected During Inspection Sloppy joe sauce was observed cooling with the lid on the container (84 degrees), cooling for 1 1/2 hours.
Cool foods from 135 degrees to 70 degrees in 2 hrs, then 70 degrees to 41 degrees in the next 4 hrs. Do not cover food until food is at an internal temperature of 41 degrees.
Action Taken: PIC placed sloppy joe in the cooler, monitoring temperature with calibrated thermometer.

Priority Item Corrected During Inspection Sliced Tomatoes were observed being stored on the counter top at an internal temperature of 74°F.
Maintain cold potentially hazardous foods at or below 41°F
Action Taken: PIC discarded tomatoes.
