COOL ALL READY TO EAT, POTENTIALLY HAZARDOUS FOODS RAPIDLY FROM 135F TO 70F IN TWO HOURS THEN TO 41F IN ANOTHER FOUR HOURS.

TWO PRIORITY VIOLATIONS WERE CITED AND CORRECTED DURING THIS INSPECTION.

THIS FACILITY NEEDS TO DEVELOP BETTER COOLING METHODS FOR READY TO EAT, POTENTIALLY HAZARDOUS FOODS LIKE MEAT, BEANS AND RICE. THEY NEED TO BE COOLED FASTER THAN THEY CURRENTLY ARE. FURTHER, MORE SHELVING IN THE WALK-IN COOLER WILL HELP WITH SEGREGATING RAW ANIMAL FOODS AND STORAGE OF COOLING FOODS.
