Priority Foundation Item Corrected During Inspection Observed a container of mashed potatoes (3 Ibs) and a container of marinara sauce (3 Ibs) approximately a week past the date mark.
Discard noted items.
Action Taken: PIC discarded noted items.

4-501.114 / MANUAL AND MECHANICAL WAREWASHING EQUIPMENT - SANITIZER NOT BEING USED PER MANUFACTURER
Priority Item Repeat The sanitizer concentration for chlorine in the dishwasher is at 0 ppm. Observed sanitizer bucket almost empty. New sanitizer bucket is on order per PIC. REPEAT X2
Repair noted item. Use test strips to measure proper sanitizer concentration and adjust the concentration accordingly. PIC contacted company for service at time of inspection. Until further notice, utilize 3-compartment sink to wash, rinse, and sanitize dishes and utensils. A follow-up shall occur no later 14 days. Correct By: 29-Feb-2024
4-602.11 (A-D) / EQUIPMENT FOOD-CONTACT SURFACE
Priority Item Corrected During Inspection Observed excessive food debris on meat slicer located in the back of house. Slicer is used every other day or so per employee. Slicer was used within four hours. Slicer was cleaned with only hot water per employee.
Properly clean noted item by washing, rinsing, and then sanitizing after every use.
Action Taken: PIC washed, rinsed, and sanitized noted item.

4-603.16 / RINSING PROCEDURES
Core Item Corrected During Inspection Observed 3-compartment sink set up at rinse, wash, and sanitize.
Properly set up 3-compartment sink as wash, rinse, sanitize.
Action Taken: Employee emptied second basin and filled first basin with soap and water. 3-compartment sink was set up to wash, rinse, and sanitize.

5-205.11 / USING A HANDWASHING SINK
Priority Foundation Item Corrected During Inspection Observed food debris in the handsink located next to the dishwasher in the back of house. Observed ice cubes and a wet towel located in the handsink in the front of house.
Removed noted items from handsink and train food employees that handwashing sinks shall not be used for any other purpose than handwashing.
Action Taken: PIC removed noted items.

5-402.11 / BACKFLOW PREVENTION
Priority Item Corrected During Inspection Observed insufficient air gap of three drains connected to the 3-compartment sink between floor drain and drain line.
Provide air gap that is two times pipe diameter or at least one inch in between floor drain and drain line.
Action Taken: PIC provided sufficient air gaps that are at least one inch in between floor drain and drain line. Correct By: 15-Feb-2024

FL 289.2129 / Certification of managerial employee under program accredited by American national standards institute; rules.
Core Item The food safety manager's certification have not completed an approved training program. Two employees are expected to take FSM exam in the month of March, 2024 per owner.
The food safety manager shall provide proof of FSM certifications via email. Correct By: 15-Apr-2024
Comments
This was a routine inspection. Observed an approved sanitizer and food is from an approved source.

A follow-up shall be conducted no later than 14 days for violation 4-501.114.

If there is a third repeat of violation 4-501.114 upon the next visit, an office conference shall be held at GCHD along with the associated fees due to noncompliance of the 2009 Food Code due to noncompliance of the 2009 Food Code.
