4-601.11 (A) / EQUIPMENT, FOOD CONTACT SURFACES, AND UTENSILS
Priority Foundation Item Corrected During Inspection Observed the food slicer to be soiled in the front.
Maintain food contact surfaces in a clean condition.
Action Taken: Employee took slicer apart to be thoroughly washed.

4-601.11 (B-C) / EQUIPMENT, NONFOOD CONTACT SURFACES, AND UTENSILS
Core Item Corrected During Inspection Observed the mixer heavily soiled around the top.
Clean and remove dust, dirt, food residue, and other debris from all non-food contact surfaces of equipment.
Action Taken: Employee sanitized to remove the food debris.

4-603.16 / RINSING PROCEDURES
Core Item Corrected During Inspection Observed no rinse step in the 3 compartment sink for cleaning dishes.
Rinse all utensils and equipment utilizing a distinct, separate water rinse.
Action Taken: Employee rinsed off dishes after the washing step.

4-702.11 / BEFORE USE AFTER CLEANING
Priority Item Corrected During Inspection Observed no sanitizing step being used after the wash and rinse cycle.
Adjust warewashing operation procedures to assure utensils are exposed to the sanitizer solution for the required time period.
Action Taken: Employee was shown to set up sanitizer for three compartment sink. Warewashing machine dispenses a correct amount of sanitizer if would rather use than three compartment sink.
